Avocado and Grapefruit Salad with Radish Microgreens

I use radish as a color enhancer and garnish.
This is one of the easiest microgreens to grow. The darker-colored types are high in vitamins, minerals, and antioxidants.

Equipment
· 4 Salad plates; Small cup.
Ingredients
· 4 oz radish microgreens rinsed and dried
· 2 avocados
· 2 grapefruits
· 1 tbsp olive oil extra virgin
· 1 tbsp vinegar
· ½ tsp salt to taste
Instructions
Mix the oil and vinegar in a small cup. Add salt to taste.
Peel and segment grapefruits. Set aside.
Slice avocados in halves.
Remove seeds and skin.
Place on individual plates.
Fill centers with grapefruit segments.
Place the microgreens on top.
